Okay, so somehow we have no pictures of this when this was our best dinner yet!! We were very nervous cooking for 7, but none the less, things went great. Pre warning: This dinner was A LOT of work. It consisted of:
-2 cooked full chickens
-Gravy
-Mashed potatoes
-Carrots
-Asparagus
As we all know, the hardest part: Timing.
1. Wash & peel the potatoes and stick them in a pot of water with some salt and olive oil. We left them in the frige for a bit.
2. Pre-heat oven, stick chickens in. Take out when they're about 165.
3. About a half hour of time left until chicken is done, take out potatoes, mash them, put them into a pot on the stove and add butter and salt. Use a mixer to mix until they're fluffy. (Scott likes um creamy. Not my family....so go with guest preference)
4. Vegetables are trickey depending on how you like them. My family likes them grilled so I stuck the carrots and asparagus on a pan and baked them. FML>>>takes forever. BOIL carrots. Asparagus can pass either way depending on how your guests like it. If they like it hard (That's what she said) it's okay to bake. If they like it soft....baking is not your best option. And yes, grilling is an option.
Now to our secret...duh duh duh...don't tell anyone. This what we used for the chickens...
Chickens in a bag! Pre-seasoned and the nasty stuff already taken out. I was a little nervous to use this but it came out awesome!! No joke, the best, most juicy chicken I've ever had! And let me tell you, I've had some juicy and amazing chicken. (My parents owned a restaurant for 18 years) I think the little trick we used actually worked very well. We put the chicken breast side down! yaaaaa. :)

Chicken With Garlic Bread Crumbs
Not sure what happened here..pretty flavorless. We used Panko bread crumbs. Needless to say, not impressed. (Scott loves them on other things though, so I guess I need to give them a second try.) We decided to try to add some flavor by adding fresh sqeezed lemon juice on top...this made a big difference. I also dipped mine in a little italian dressing...again big difference. I think the mistake we made here was not making some sort of sauce for them. None the less...not bad.
